What type of fruit is most suited for making fruit cider?
|
Good fruit cider is available everywhere but not with every type of apples and every type of pears. Therefore, it is difficult to establish a general recipe.
A sourly, well matured apple is best suited for making apple fruit cider. What is not suited are sweet and mild dessert apples. The same is true for pears. The most popular cider pears are the ‘Swiss Water Pear’, the ‘Upper Austrian Wine Pear’ and the ‘Yellow Cider Pear’. Connoisseurs have a passion for a pear fruit cider made of the champagne baked pear.
Those who do not possess their own fruit may have their barrels, casks or jars filled up in a cidery, where they might also get the right mix of apples and pears. 6 hundredweights of apples and 2 hundredweights of pears for instance will give quite a drinkable and tasty cider.

No, the Apple and Pear Mill is almost maintenance-free. Just the cutter unit should be sharpened from time to time.

Hydropress

May the hydropress also be operated with compressed air?
|
|
Attention! Do not operate the hydropress with compressed air on any account! If the membrane is damaged under compressed air e.g. by a wire or the like, this may generate an explosive pressure discharge. This involves a substantial danger of injury for individuals!

How is the hydropress driven?
|
|
The operation of the hydropress neither calls for muscle force nor for an electric motor. It is only necessary to connect a garden hose to the normal water piping and to open the water tap. Thus, the rubber membrane will expand and press the shredded fruit against the grid of the basket.

What sizes of the hydropress are available?
|
|
The hydropress is available in volumes of 20, 40, 90 and 180 litres.

Do I need chemical preservation means for the storage in a Drink Pressure Cask?

No. You may produce your beverages and keep them fresh in this versatile cask for months, without having to add any chemical preservation means.

How long does the heating last?
|
|
Depending on the size of the pressure cask, the heating will last 1.5 to 3 hours.
|

To what temperature level does the fruit juice have to be heated?
|
|
85°C should be achieved everywhere, so that all yeast cells become inactive.
|

What do I have to take care of to prevent the juice from going off and starting to ferment?
|
|
Heating up to at least 85°C, the temperature should be achieved everywhere (agitating with a sterile spoon).
Do not install the cask in a room with fermentation barrels (the air is full of yeast cells), do not transport the cask after boiling and putting up the lid, use a thoroughly cleaned discharge tap (in the dishwasher), ensure a sufficient sealing with Vaseline oil (use rather more than less).

Why is the Speidel Juice Fruit Cask always "free from air", even if the cask is not completely filled up?
|

The Juice Fruit Cask is equipped with a so-called “oil floating lid”. This lid adapts itself to the contents of the cask or barrel by always swimming on top of the juice. A sealing ring made of the finest, medically clean oil will keep the aerial oxygen away.

Why is a beverage / fruit cider cask or barrel better than the traditional wooden barrel for today’s needs?
|
|
Formerly, the cellars of ancient houses were more humid and always consistently cool as compared to the cellars in modern houses. A wooden barrel would dry out very quickly in the new cellars and would form cracks. As a consequence, bacteria could penetrate into the barrel via the air. Our casks and containers, however, are completely resistant to heat and dryness. They are and they remain tight.
